Who is Blue Mountain Flavors?

Blue Mountain Flavors manufactures unique savory flavors for use in the food industry. Started in 1988 by Dr. William Baugher, Blue Mountain Flavors draws on decades of experience to bring the highest quality flavors to our customer.

What is the shelf life of Blue Mountain Flavors Products?

Blue Mountain’s products are shelf stable. Our oil and liquid based flavors have a shelf life of two years from the day of manufacture. Our dry blends have a shelf life of one year from the manufacture date.

To ensure the safety of our oil based products, water activity is measured for each batch. With readings below 0.85 aW, the product will not support microbial growth.

For our liquid products, pH is taken and must be below 4.6 according to FDA guidelines.

Does Blue Mountain offer Halal or Kosher Flavors?

Blue Mountain offers many products that are Kosher and Halal. With our Kosher and Halal products made on separate lines from our non-Kosher products, we work with our certifying agencies to ensure that all religious standards are maintained. All of our Kosher products are pareve, allowing them to be used in both meat and dairy Kosher foods.

What makes Blue Mountain products special?

Blue Mountain products are highly concentrated, allowing them to be used at low usage levels while providing a significant impact on the finished product. Low usage levels provide you an economical way to improve flavor while reducing sodium and total fat content.

Our products are heat stable, permitting use in many cooking applications, and shelf stable requiring no refrigeration and maintaining their flavor over time.

What is reaction technology?

Reaction technology is used to mimic the reactions that occur when animal cells are heated, during roasting or grilling, for example. These reactions are what cause many of the different flavors that come from cooked meat. Our process allows us to concentrate these desirable flavors.

Oils and other materials are added to a reactor, which acts like a giant pressure cooker. We maintain exact temperature and pressure to “cook” our oils. The final product is heat stable, shelf stable, and inhibits microbial growth.

How long has Blue Mountain Flavors served the food industry?

Blue Mountain Flavors has served the food industry since 1988. The company was founded by food research and development veteran, William L. (Bill) Baugher, Ph.D., in Arcadia, Indiana. Blue Mountain operations have been headquartered in Kinston, North Carolina, since 1991.

What about facilities, equipment, and production capacity?

Blue Mountain Flavors has over 66,000 sq. ft. of facilities located on seven acres in an industrial park. The company has the capability to produce an additional 5 million pounds of product per year with a single production shift. Blue Mountain is capable of running large batch and small batch reactions along with liquid blending in both kosher and non-kosher manufacturing lines. Along with our recently completed state of the art dry blending line, Blue Mountain continues to increase both its production abilities, and industry impact.

In the modern business climate, getting raw materials fast can be critical. Blue Mountain is often able to ship the next day, and sometimes the day of the order.

What are typical use levels?

Because of the varied applications in which Blue Mountain products are utilized, use levels can vary widely. Common use levels are between 0.10% to 0.25%.

How does Blue Mountain compare is terms of pricing?

Blue Mountain takes pride in its competitive pricing, generally 25% to 50% less than similar products on the market.

How are Blue Mountain flavors packaged?

Liquid and paste products are usually packed in 3-1/2-, 5-, or 6-gallon DOT approved polyethylene pails. Pastes and liquid products are generally packed 35 to 60 pounds or kilos per pail.

5 gallon shipping totes, 55-gallon drums, or 275-gallon totes are also available.

Dry products are packed 40 lbs in plastic bags inside double-walled cardboard boxes.

Our flavors are generally sent 24 pails or 36 boxes on a pallet.

Note: We will ship less than pallet load order.

We have excellent discounts for full load and LTL carriers.

We handle international sea and air, third party, and collect shipments daily.
